The jackfruit tree — chakka maram/Plavu — is Kerala’s most generous host.

Come April and May, when the tropical heat settles over the Western Ghats and Kerala’s backwaters, jackfruit hangs heavy from branches across homesteads of keralam. It is in this season that Keralam’s most iconic snack is born. Raw jackfruit — the firm, starchy, unripe flesh of Artocarpus heterophyllus — is the only ingredient that can make this chip work. Not the ripe, sweet fruit. The raw fruit, harvested before its sugars fully develop, is what gives Chakka Varuthathu its defining character: a mild, subtly earthy flavour, a dense bite, and the ability to fry into glass-thin, golden discs with a crunch that carries.

At Eat India, we craft these chips on a traditional recipe.

Each jackfruit is hand-prepared, sliced to consistent thinness, and fried in edible vegetable oil at a controlled temperature — the method that ensures every chip reaches the same golden colour and crisp texture, batch after batch. There is no added sugar. The natural sugars present in raw jackfruit — significantly lower than in ripe jackfruit — provide the chip’s mild sweetness without any addition. Salt finishes the seasoning. Nothing else.

The result is a premium artisanal snack that belongs in a different category from mass-produced jackfruit chips.
