Along the villages and backyard gardens of Kerala, Nendran trees grew tall and unhurried.
The Nendran banana — also called Ethakka in Kerala, Nendrapazham when fully ripe — is not the Cavendish banana of supermarket shelves. It is longer, firmer, and when fully ripe, its flesh turns a deeper shade with a sweetness that is richer, more complex, and distinctly its own. Musa paradisiaca var. Nendran grows almost exclusively in Kerala and is listed as a Geographical Indication (GI) product of Kerala — meaning no other region can authentically claim it.
Most banana chips are made from raw Nendran.
The raw fruit is starchy, firm, and produces a hard, savoury chip. That is the Ethakka Upperi — the classic Kerala banana chip every competitor sells. Eat India Sweet Banana Chips begin where that tradition ends. We wait for the Nendran to ripen fully — until the starches have converted to natural fructose and sucrose, until the flesh is soft and deeply sweet. Only then do we slice. Not in rounds. In long pieces, cut along the length of the banana, producing chips that are wider, more irregular in shape, and carry more surface area for the heat to work on.
What happens when ripe banana meets hot oil is a specific chemistry.
The high natural sugar content of the ripe flesh undergoes Maillard browning and caramelisation simultaneously at the chip’s edges — turning them a warm, honeyed gold that deepens as the chip crisps. This colour cannot be manufactured. It cannot be added. It is the result of peak-ripe fruit meeting the right temperature at the right moment. The turmeric in the recipe adds a further layer of warm colour and its own mild earthiness, working with the banana’s sweetness rather than against it.
